Palak (Spinach) is considered the most nutritious vegetable in many parts of the world, but when you look at the chemistry of spinach, it is not better than cabbage or sprouts.

When it comes to basic concepts of Ayurveda Calcium and Iron should not be consumed together as they both are not compatible with each other.

Another important aspect of spinach is that it is a rich source of oxalates. The intake of oxalate should be strictly restricted especially during renal stones.

Once consumed oxalate tries to bind with other minerals present in the body. Foods rich in oxalate will always have an impact on the absorption of iron

Palak or Spinach is high in calcium but it is also rich in oxalates so the absorption of calcium is prevented from being absorbed

Spinach certainly has some nutritional benefits but it has got its certain limitations. The iron content of spinach has low bioavailability. The majority of iron in spinach is not absorbed by the small intestine 

The other important fact about spinach is that iron present in spinach is non-heme which is generally poorly absorbed.
